Vinas Viejas de Paniza 2017 Garnacha

Displaying dark fruits such as mulberries, blackberries, cinnamon and hints of dry herbs

Vinification – Produced with old vines up to 100 years old, coming from the most elevated surroundings of Paniza, in the wine region of Cariñena, in the north of Spain. After crushing and de-stemming, the grape macerates for 15 days and the fermentation takes place afterwards at controlled temperature in stainless steel tanks, with several daily pumping over. After the initial fermentation the wine is drawn off and it is left in barrels so that it can undergo malolactic fermentation. Then the wine is decanted and continues aging in barrels for 6 months. Finally, the wine is bottled and stored in our underground cellar.
